Prepare the chicken
Start by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness of about 1/2 inch. This ensures even cooking.

Season the chicken
Sprinkle both sides of the chicken breasts with salt and black pepper. Let them sit for about 15 minutes to absorb the flavors.

Set up a breading station
In three separate shallow bowls, place flour in the first, beaten eggs in the second, and panko breadcrumbs in the third.

Bread the chicken
Dredge each piece of chicken in flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off, and finally coat it in panko breadcrumbs, pressing gently to adhere.

Fry the chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the chicken pieces. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Mix the sauce
In a small bowl, combine ketchup, soy sauce, mirin, sugar, Worcestershire sauce, and garlic powder. Whisk until well combined.

Slice the fried chicken katsu and serve it hot with the katsu sauce drizzled over the top or on the side for dipping.
