Prepare Chicken Katsu

Season the Chicken
Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper.

Breading Process
Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for panko breadcrumbs. Dredge each chicken thigh in flour, shaking off excess. Dip into beaten eggs, then coat with panko breadcrumbs, pressing down to adhere.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken thighs and cook for about 4-5 minutes on each side until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
