Preparing Charshu

    Marinating the Pork

    In a bowl, combine soy sauce, sake, sugar, ginger, and garlic. Mix well.

    Cooking the Pork

    Add the pork belly to the marinade, ensuring it is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Roasting the Pork

    Preheat the oven to 160°C (320°F). Place the marinated pork in a baking dish and pour the remaining marinade over it. Cover with foil and roast for about 2 hours, basting occasionally. Remove foil and roast for another 30 minutes until caramelized. Let it cool, then slice thinly.

Cooking Udon

    Boiling Udon Noodles

    Bring a large pot of water to a boil. Add udon noodles and cook according to package instructions until tender, typically about 8-10 minutes. Drain and rinse under cold water to stop cooking.

    Preparing Dashi Broth

    In a pot, heat dashi broth over medium heat. Add soy sauce and mirin. Stir to combine and let it simmer for 5 minutes.

Assembling the Dish

    In a bowl, place a serving of udon noodles. Pour hot dashi broth over the noodles, ensuring they are well submerged.

    Adding Toppings

    Top the noodles with sliced charshu, tofu skin, kamaboko, and sprinkle with sliced green onions and nori strips.

    Serve immediately while hot, allowing each person to mix in the toppings as desired.
