Method

Marinate the Beef

    Combine Marinade Ingredients

    In a bowl, whisk together soy sauce, mirin, sugar, minced garlic, and minced ginger.

    Marinate the Beef

    Add the sliced beef to the marinade, making sure it is well-coated. Cover and refrigerate for at least 30 minutes.

Prepare the Udon

    Cook Udon Noodles

    Bring a large pot of water to a boil. Add udon noodles and cook according to package instructions (usually about 8-10 minutes). Drain and set aside.

    Caramelize Onions

    In a large skillet, heat sesame oil over medium heat. Add sliced onions and sauté until golden brown and caramelized, about 10 minutes.

    Cook Beef

    Increase heat to medium-high and add the marinated beef to the skillet with the caramelized onions. Cook until the beef is browned and cooked through, about 5-7 minutes.

    Add Broth

    Pour in the beef broth or water, and bring to a simmer. Add salt and black pepper to taste.

    Add Tofu and Kamaboko

    Stir in the sliced tofu skin and Kamaboko, and cook for an additional 3-5 minutes until heated through.

    Combine with Udon

    Add the cooked udon noodles to the skillet, tossing to combine everything well. Cook for another 2 minutes to heat the noodles through.

Serve

    Garnish and Serve

    Serve the beef udon hot, garnished with chopped green onions. Enjoy!
