Make the Pretzel Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add spent grain, flour, and salt, and knead until smooth. Let the dough rise for about 1 hour or until it doubles in size.

Shape the Pretzels
Preheat the oven to 450°F (230°C). Punch down the dough and divide it into 8 equal portions. Roll each piece into a long rope and shape it into a pretzel. Place on a baking sheet lined with parchment paper.

Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds. Remove with a slotted spoon and place back on the baking sheet.
