Prepare the Collards
Wash the collard greens thoroughly under cold running water. Remove the tough stems and cut the leaves into bite-sized pieces.
Make the Batter
In a large bowl, combine the flour, cornmeal, paprika, garlic powder, black pepper, and salt. In another bowl, whisk together the egg and milk until well combined. Gradually add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Collards
Dip the collard greens pieces into the batter, allowing any excess to drip off, and carefully place them in the hot oil. Fry in batches until golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to remove the collards and place them on paper towels to drain.
Serve
Serve the crispy fried collards hot, accompanied by your favorite dipping sauce or Creole Goddess Dip.
