Marinade

Method

Marinade Preparation

  1. 1

    Prepare the Chiles

Remove stems and seeds from the dried guajillo and ancho chiles. Soak the chiles in hot water for about 15 minutes until softened.

  2. 2

    Make the Marinade

In a blender, combine the softened chiles, pineapple juice, apple cider vinegar, garlic, cumin, oregano, salt, pepper, and brown sugar. Blend until smooth.

  3. 3

    Marinate the Pork

Cut the pork shoulder into small pieces and place it in a large bowl or resealable bag. Pour the marinade over the pork, ensuring it is well-coated. Seal and refrigerate for at least 4 hours, or preferably overnight.

Cooking the Pork

  1. 4

    Cook the Pork

Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 15-20 minutes, turning occasionally, until well-browned and cooked through. Allow to rest for a few minutes before slicing.

Assembling the Tacos

  1. 5

    Warm the Tortillas

While the pork is resting, warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side until pliable.

  2. 6

    Assemble the Tacos

Slice the cooked pork into thin pieces. Place a few pieces on each tortilla, top with diced pineapple, chopped onion, and cilantro. Serve with lime wedges and salsa on the side.
