Method

Tempura Shrimp

    Prepare the Tempura Batter

    In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually pour in the cold beer while mixing until you achieve a smooth batter.

    Heat the Oil

    In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Dip each shrimp into the tempura batter and carefully place them into the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Esquite

    Prepare the Corn

    In a skillet, cook the corn kernels over medium heat until they are lightly charred, about 5-7 minutes.

    Mix the Esquite Ingredients

    In a bowl, combine the charred corn, mayonnaise, Cotija cheese, lime juice, and chili powder. Mix well and set aside.

Rice

    Cook the Rice

    In a saucepan, combine the long-grain rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.

Pinto Beans

    Sauté the Onion and Garlic

    In a saucepan, sauté the diced onion and minced garlic over medium heat until the onion is translucent.

    Add the Beans

    Add the rinsed pinto beans and cumin to the saucepan. Cook for an additional 5-7 minutes, mashing slightly with a fork. Season with salt to taste.

Pico de Gallo

    Mix the Pico de Gallo Ingredients

    In a bowl, combine the diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Serrano Aioli

    Combine Serrano Aioli Ingredients

    In a bowl, mix together the minced serrano peppers, mayonnaise, minced garlic, lime juice, and salt. Stir until smooth.

Crema Fresca

    Prepare the Crema

    In a bowl, whisk together the sour cream, lime juice, and salt until smooth and well combined.

Assembly

    Assemble the Dish

    On a plate, serve a portion of rice, topped with pinto beans, a few pieces of fried shrimp, esquite, pico de gallo, and slices of avocado. Drizzle with serrano aioli and crema fresca.
