Prepare the Cilantro-Serrano Sauce

Blend the Sauce
In a blender, combine fresh cilantro, serrano peppers, lime juice, minced garlic, salt, and black pepper. Blend until smooth. Taste and adjust seasoning if necessary. Set aside.

In a large skillet, heat olive oil over medium-high heat. Add the diced red onion and sauté for 2-3 minutes until translucent. Add the shrimp and cook for 3-4 minutes or until they turn pink and are cooked through. Remove from heat.
Melt the Cheese

Melt the Cheese
In an oven-safe dish, layer the cooked shrimp and sautéed onions. Top with Chihuahua cheese. Place the dish in a preheated oven set to broil. Broil for about 5-7 minutes or until the cheese is melted and bubbly.

Serve with Tortillas
Remove the dish from the oven and let it cool for a minute. Serve the queso fundido hot with warm corn tortillas and drizzle with the cilantro-serrano sauce.
