Cooking Beans

Prepare the Beans
Rinse the pinto beans under cold water to remove any dirt or debris.

Boil Beans
In a large pot, combine the rinsed pinto beans and water. Bring to a boil over high heat.

Simmer Beans
Reduce the heat to low and cover the pot. Simmer for about 1-2 hours, or until the beans are tender. Add salt during the last 10 minutes of cooking.

Once cooked, drain any excess water and set the beans aside.

Heat Oil
In a large skillet, heat the olive oil over medium heat.

Add the diced onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Mash and Cook
Mash the beans with a fork or a potato masher until they reach your desired consistency. Cook for about 5-10 minutes until heated through.

Serve the refried beans hot, topped with crumbled queso fresco and fresh cilantro.
