Salad Preparation

Prepare the Greens
Rinse the winter greens under cold water to remove any dirt or debris. Spin dry in a salad spinner or pat dry with paper towels. Tear the greens into bite-sized pieces and place them in a large salad bowl.

Prepare the Citrus
Peel the orange and grapefruit, removing any white pith. Segment the fruits by cutting between the membranes to release the segments. Add the citrus segments to the bowl with the greens.

Make the Vinaigrette
In a small bowl, whisk together the honey, Dijon mustard, olive oil, and a pinch of salt and pepper. Adjust the seasoning to taste.

Combine the Salad
Drizzle the vinaigrette over the greens and citrus in the salad bowl. Toss gently to combine, ensuring all the ingredients are well coated.

Top with Cheese and Nuts
Crumble the peppered chèvre over the top of the salad and sprinkle the candied hazelnuts evenly across the salad.

Serve immediately as a refreshing winter salad, garnished with additional black pepper if desired.
