Making the Sandwich

    Prepare the Ingredients

    Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper to taste.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and let drain on paper towels.

    Assemble the Sandwich

    On two slices of sourdough bread, layer the turkey, crispy bacon, mashed avocado, slices of Comté cheese, basil leaves, and a handful of arugula. Top with the remaining two slices of bread.

    Toast the Sandwich

    Spread butter on the outer sides of the sandwich. Place in a skillet over medium heat and toast until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.

Making the Hand Cut Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

    Fry the Potatoes

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). Carefully add the potato sticks in batches and fry until golden brown, about 5-7 minutes.

    Drain and Season

    Remove the fries from the oil and let them drain on paper towels. Season with salt to taste while still hot.
