    Prepare the Fries

    Start by preparing the hand-cut fries. Wash and peel the potatoes, then cut them into thin strips. Rinse the strips in cold water to remove excess starch, then pat them dry with a towel.

    Fry the Potatoes

    Heat oil in a deep fryer or a large pot to 180°C (350°F). Carefully add the potato strips in batches, frying them for about 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.

    Assemble the Reuben

    While the fries are cooking, assemble the Reuben sandwich. Lay out two slices of rye bread and layer each with a generous portion of corned beef, followed by sauerkraut and a layer of Emmental cheese.

    Grill the Sandwich

    Top with the remaining slices of rye bread. Heat a skillet or griddle over medium heat and melt a little butter. Place the assembled sandwiches on the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

    Once the sandwiches are ready, remove them from the skillet and let them rest for a minute. Cut in half and serve alongside the crispy hand-cut fries.
