Prepare the Espresso
Brew 200 ml of espresso coffee and let it cool to room temperature.

Make the Cream Mixture
In a mixing bowl, whisk together 4 egg yolks and 100 g of sugar until the mixture is pale and creamy.

Add Mascarpone
Gently fold in 500 g of mascarpone cheese into the egg yolk mixture until smooth.

Dip the Biscotti
Quickly dip 200 g of chocolate biscotti into the cooled espresso, ensuring not to soak them.

Layer the Tiramisu
In a rectangular dish, layer the dipped biscotti at the bottom, then spread half of the mascarpone mixture over it.

Add More Biscotti
Add another layer of dipped biscotti on top of the mascarpone mixture.

Top with Remaining Cream
Spread the remaining mascarpone mixture over the second layer of biscotti.

Chill the Tiramisu
Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for the best flavor.

Prepare Garnishes
Before serving, melt 100 g of dark chocolate and drizzle it over the chilled tiramisu. Crush 50 g of pistachios and sprinkle them on top along with 100 g of amarena cherries.

Finish with Cheese
Grate 30 g of Parmigiano Reggiano and 30 g of Pecorino cheese over the top for a savory finish.

Slice the tiramisu into portions and serve chilled.
