Method

Salad Preparation

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the house smoked bacon until crispy. Remove from pan and let drain on paper towels. Crumble into bite-sized pieces.

  2. 2

    Prepare the Cornbread

Cut the cornbread into small cubes and toast them in the oven at 350°F (175°C) for about 10 minutes until crispy.

  3. 3

    Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes for soft yolks. Remove with a slotted spoon and place on a paper towel to drain.

  4. 4

    Assemble the Salad

In a large bowl, combine the toasted cornbread, crumbled bacon, pickled onions, and chopped chives. Gently toss to combine.

Dressing Preparation

  1. 5

    Make the Dressing

In a mixing bowl, whisk together buttermilk, grated white cheddar, mayonnaise, apple cider vinegar, garlic powder, salt, and black pepper until smooth and creamy.

Final Assembly

  1. 6

    Serve the Salad

On a plate, place a generous amount of the salad mixture. Top with a poached egg and drizzle with the buttermilk white cheddar dressing. Garnish with additional chives if desired.
