Wash and peel the Russet potatoes. Cut them into even-sized fries, about 1/4 inch thick for even cooking.

Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

After soaking, drain the fries and pat them dry thoroughly with paper towels to remove excess moisture.
