    Prepare the Steak

    Season the prime NY strip steaks with olive oil, salt, black pepper, and garlic powder. Let them marinate for at least 30 minutes.

    Grill the Steak

    Preheat the grill to medium-high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let them rest for 5 minutes before slicing.

Fried Chile Relleno

    Prepare the Filling

    Boil the potatoes until tender, then mash them. Sauté chopped onions in a pan until translucent, then mix with the mashed potatoes and cheddar cheese. Set aside.

    Stuff the Peppers

    Roast the poblano peppers over an open flame until charred, then place them in a bowl covered with plastic wrap to steam for about 10 minutes. Peel the skins off and make a slit down the side of each pepper. Stuff the peppers with the potato and cheese mixture.

    Batter and Fry

    Beat the eggs in a bowl. Dip the stuffed peppers into flour, then into the egg mixture. Heat vegetable oil in a frying pan over medium heat, and fry the peppers until golden brown on all sides. Drain on paper towels.

Pickled Onion

    Prepare the Pickled Onions

    Slice the red onion thinly. In a bowl, combine apple cider vinegar, sugar, and salt until dissolved. Add the sliced onions and let them pickle for at least 30 minutes.

Garnish

    Prepare Garnish

    Chop fresh cilantro and thinly slice radishes. Toast pepitas in a dry skillet until lightly browned and fragrant.
