In a bowl, mix the cream cheese, finely chopped jalapeño, scallion, garlic powder, salt, and black pepper until well combined.

Prepare the Prawns
Peel and devein the prawns, leaving the tails on. Make a slit along the back of each prawn and carefully open it up to create a pocket.

Fill each prawn pocket with the cream cheese mixture, pressing gently to ensure they are well stuffed.

Bread the Prawns
Coat each stuffed prawn in flour, then dip in the beaten egg, and finally coat with breadcrumbs. Make sure they are evenly coated.

Heat the Oil
In a large frying pan or deep fryer, heat the oil over medium-high heat until hot.
