Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This helps to remove excess moisture.

Make the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, chili flakes, garlic powder, orange zest, and dried rosemary. Mix well until all dry ingredients are evenly combined.

Heat the Oil
In a deep frying pan or pot, heat the olive oil over medium-high heat until it reaches 180°C (350°F). You can test if the oil is ready by dropping a small piece of bread into it; if it bubbles and turns golden, it’s ready.

Coat the Calamari
Dip each calamari ring first into the egg wash, allowing any excess to drip off, then coat it in the flour mixture. Ensure each piece is well-coated.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve the fried calamari hot with lemon wedges on the side for squeezing over the top.
