Winemaking Process

Harvesting Grapes
Harvest Cabernet Sauvignon and Merlot grapes in mid to late September, selecting only the ripest fruit.

Crushing and Destemming
Crush and destem the grapes in a clean fermentation bucket, ensuring no leaves or stems are included.

Adding Water and Sugar
Add 1 gallon of water and 1 cup of sugar to the crushed grape mixture, stirring until fully dissolved.

Adding Yeast and Campden Tablets
Dissolve 2 Campden tablets in a small amount of warm water and add to the mixture. Then, sprinkle the packet of red wine yeast evenly over the mixture.

Fermentation
Cover the fermentation bucket with a clean cloth and allow the mixture to ferment for 7-14 days, stirring daily.

Malolactic Fermentation
After primary fermentation, add the malolactic bacteria to the wine. Allow the wine to undergo malolactic fermentation for 2-3 weeks.

Oak Aging
Add 2 cups of medium toast oak chips to the wine and transfer to a clean carboy for aging. Seal with an airlock.

After 6 months of aging, siphon the wine into clean bottles, leaving some space at the top and seal with corks.
