Prepare the Crust
In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Mix in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour and salt. Gradually add this mixture to the creamed mixture until just combined.

Bake the Crust
Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until golden. Allow to cool completely.

Mix Sugar and Eggs
In a mixing bowl, whisk together the granulated sugar and large eggs until smooth. Add cornstarch and mix until well combined.

Add Bananas
Mash the ripe bananas and fold them into the pastry cream. Allow to cool completely.
Topping

Make Chantilly Cream
In a chilled bowl, whip the heavy cream with powdered sugar until soft peaks form.

Assemble the Tart
Spread the cooled banana pastry cream into the baked tart crust. Top with fresh banana slices and then pipe or dollop the chantilly cream on top. Sprinkle with toasted pecans.

In a saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves, then stop stirring and let it cook until it turns a golden amber color.
