Prepare the Dates
Preheat your oven to 375°F (190°C). Begin by carefully slicing each Medjool date lengthwise on one side to create an opening. Remove the pit if not already pitted.

Stuff the Dates
Using a small spoon or your fingers, fill each date with approximately a teaspoon of chèvre cheese. Place one Marcona almond inside each stuffed date to add a delightful crunch.

Wrap in Bacon
Take one slice of bacon and cut it in half. Wrap each stuffed date with half a slice of bacon, securing the ends underneath or with a toothpick if needed.

Drizzle the wrapped dates with olive oil and season with black pepper and salt to taste. This will help enhance the flavors as they cook.

Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until the bacon is crispy and golden brown.
