Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool for about 10 minutes.
Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooled rice until evenly coated. Set aside.
Prepare the Tuna Mixture
In a bowl, combine the diced fresh tuna with a drizzle of soy sauce and mix gently to coat. Set aside.
Assemble the Rolls
Lay a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking, and spread a thin layer of sushi rice over the nori, leaving about an inch at the top. Place a line of tuna mixture, cucumber, and avocado along the bottom edge of the rice.
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Seal the edge of the nori with a little water.
Slice the Rolls
Using a sharp knife, slice the roll into bite-sized pieces. Repeat with the remaining ingredients.
Serve
Serve the tuna California rolls on a platter with wonton chips, soy sauce, wasabi, and pickled ginger on the side.
