Preparation
Prepare the tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with paper towels.
Set up the breading station
In three separate shallow bowls, place the flour in one, the buttermilk in the second, and the cornmeal mixed with black pepper and cayenne in the third.
Bread the tomatoes
Dip each slice of tomato first into the flour, then into the buttermilk, and finally into the cornmeal mixture, ensuring an even coating.
Heat the oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
Fry the tomatoes
Carefully place the breaded tomato slices in the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes per side, or until golden brown and crispy.
Drain and serve
Remove the fried tomatoes and drain on paper towels. Serve warm with house giardiniera on the side.
