Combine Base Ingredients
In a mixing bowl, whisk together the heavy cream, whole milk, honey, and vanilla extract until well combined.

Add Rum
Stir in the rum into the mixture and ensure it is evenly distributed.

Prepare Raisins
In a small bowl, soak the brown and golden raisins in a little bit of rum for about 30 minutes to plump them up.

Chill Mixture
Cover the mixture and refrigerate for at least 2 hours, or until thoroughly chilled.

Churn Ice Cream
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Add Raisins
During the last few minutes of churning, add the plumped raisins to the ice cream.

Transfer the ice cream to an airtight container and freeze for at least 4 hours before serving.
