Prepare the Potato Skins
Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Scoop out the inside, leaving a thin layer of potato on the skin. Brush the skins with olive oil, sprinkle with salt and pepper, and place them on a baking sheet.

Bake the Potato Skins
Return the potato skins to the oven and bake for an additional 10-15 minutes, until they are crispy and golden brown.

Assemble the Skins
Remove the skins from the oven and sprinkle the melted cheddar cheese into each skin. Top with crumbled bacon. Return to the oven for an additional 5 minutes or until the cheese is melted.

Garnish and Serve
Remove from the oven and sprinkle with chopped green onions. Serve warm with sour cream on the side.
