Prepare the Candied Pineapple
In a medium saucepan, combine the diced fresh pineapple, granulated sugar, orange juice, orange zest, and corn syrup. Cook over medium heat, stirring occasionally, until the mixture comes to a simmer and the sugar is dissolved, about 5 minutes.

Candy the Pineapple
Reduce the heat to low and let the mixture simmer for about 15-20 minutes, or until the pineapple becomes tender and the liquid thickens into a syrup. Remove from heat and let it cool completely.

Serve
Scoop vanilla ice cream into bowls and top with the candied orange-flavored pineapple pieces. Drizzle some of the syrup over the top. Enjoy your Orange Pineapple dessert!
