    Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set aside.

    Make the Batter

    In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Onion Rings

    Dip each onion ring into the batter until fully coated, allowing any excess to drip off.

    Fry the Onion Rings

    Carefully place the coated onion rings into the hot oil in batches, frying them for about 2-3 minutes per side or until they are golden brown and crispy.

    Drain and Serve

    Remove the fried onion rings with a slotted spoon and place them on paper towels to drain excess oil. Serve hot with your choice of dipping sauces.
