    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use enough oil to fully submerge the fries.

    Fry the Potatoes

    Drain and pat the potato strips dry. Carefully add them to the hot oil in batches, avoiding overcrowding. Fry for about 4-5 minutes or until they turn golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and place them on paper towels to drain excess oil. While hot, sprinkle with salt and pepper to taste.

    Serve

    Serve the fries hot, either on their own or with your favorite dipping sauces.
