Prepare Ingredients
Wash and prep fruit
Rinse the strawberries under cold water, hull them (remove stems), and halve any very large berries. Peel the banana and break it into pieces so it blends more easily.
If you prefer a colder, thicker smoothie, pre-freeze the banana in slices for at least 1 hour and use frozen strawberries if available.
Blend
Combine in blender
Place the strawberries, banana pieces, plant-based protein powder, and ice cubes into the blender jar.
Add liquids and optional flavorings
Pour in the chilled coconut water. Add the lime juice for brightness and maple/agave only if you want extra sweetness.
Blend until smooth
Secure the lid and blend on high for 45–60 seconds, or until the mixture is completely smooth and creamy with no large fruit chunks. Stop and scrape down the sides once if needed, then pulse to finish.
Adjust consistency
If the smoothie is too thick, add coconut water 1–2 tablespoons at a time and blend briefly until you reach desired pourable consistency. If too thin, add a few more ice cubes or 1/4 cup frozen strawberries and blend again.
Serve
Pour the Skinny Coco into a tall glass.
Garnish with a sprinkle of shredded coconut and a mint leaf. Serve immediately with a straw.
