Method
Toast & Base
Toast the slices in the hot skillet 2–3 minutes per side, until golden brown and crisp. If using a toaster, toast until edges are crisp and center is slightly chewy. Remove and set aside on a cutting board or plate.
Avocado Smash
Halve the avocado(s), remove the pit, and scoop the flesh into a medium bowl. If using 1.5 avocados, mash the larger half and the smaller half together so texture is consistent.
Add the fresh lemon juice (1 tbs) immediately to the avocado to prevent browning and to brighten flavor.
Add the softened cream cheese to the bowl. Use a fork to mash and fold the cream cheese into the avocado until mostly combined but still slightly chunky — aim for a spreadable texture.
Season the smash with pink Himalayan salt (about 3 pinches) and freshly ground black pepper (1 tsp). Taste and adjust: add an extra pinch of salt or a squeeze more lemon if desired.
Assemble & Finish
Generously spread about half of the avocado-cream cheese mixture onto each toasted sourdough slice, covering the surface edge-to-edge.
Sprinkle everything bagel seasoning evenly across both slices (about 1/2 tbs per slice). Press lightly with the back of a spoon so seeds and salt adhere to the smash.
If using, dust each toast with a little lemon zest (1/4 tsp per slice) and a pinch of red pepper flakes for heat. Finish with microgreens or chopped chives for color and a fresh note.
Drizzle a small extra stream of EVOO (about 1/2 tbs divided) over the finished toasts if desired, then serve immediately.
