Smoothie Base

Method

Prepare Ingredients

1

Measure and soften

Measure out all ingredients. If using solid coconut butter, warm it briefly (5–10 seconds) in a microwave-safe bowl or spoon so it is pourable but not hot. If banana is not frozen, use whole ripe banana and consider adding the optional ice to chill.

2

Check cauliflower

If cauliflower florets are in large chunks, pulse briefly in a food processor or chop so they blend smoothly. Using small pieces prevents fibrous bits in the finished smoothie.

Blend Smoothie

3

Add liquids and powders

Pour 1 cup chilled almond milk into the blender first, then add the scoop of grass-fed whey protein powder and a pinch of sea salt. Adding liquids first helps prevent powders sticking to the blender sides.

4

Add remaining ingredients

Add 1 cup frozen cauliflower, 1 ripe (or frozen) banana, 1 tablespoon almond butter, 1 tablespoon softened coconut butter, 1 teaspoon ground cinnamon, and the optional 4 ice cubes to the blender.

5

Blend to smooth

Start the blender on low for 10–15 seconds to combine, then increase to high and blend for 45–60 seconds, or until the mixture is completely smooth and creamy with no visible cauliflower pieces. Stop and scrape down the sides with a spatula once if needed, then blend 10–15 seconds more.

6

Adjust consistency and taste

If the smoothie is too thick, add 2 tablespoons (30 ml) almond milk at a time and re-blend until you reach desired consistency. Taste and, if desired, add an extra 1/2 teaspoon cinnamon or 1/2 teaspoon almond butter for more flavor; blend briefly to incorporate.

Serve

7

Pour the smoothie into a 16–20 oz glass (this recipe yields about one large serving).

8

Garnish with banana slices, a light drizzle of almond butter, and a sprinkle of cinnamon if desired.

9

Serve immediately for best texture and freshness.
