Prepare Ingredients

Dice the apple into small, roughly 1/4–1/2-inch pieces. Measure and chop walnuts if not already chopped. Have dried cranberries and spices ready.

Cook Oats

Bring liquid to a boil

In a medium saucepan, combine 3 cups water, 1 cup milk, and 1 tsp sea salt. Bring to a gentle boil over medium-high heat.

Add oats

Stir in 1 cup steel-cut oats, reduce heat to low so the pot maintains a steady simmer, and cover partially with a lid (leave a small gap to prevent boil-over).

Simmer and stir

Cook, stirring every 6–8 minutes to prevent sticking, until oats are tender but still have a pleasant chew and the mixture is creamy, about 20–25 minutes. For a creamier texture, simmer up to 30 minutes.

Add Fruit, Nuts & Flavor

When oats are about 5 minutes from your desired tenderness (after ~15–20 minutes of cooking), stir in the diced apple and 1 tablespoon dried cranberries so they soften and meld with the oats.

Once oats reach desired doneness (about 20–25 minutes total cook time), remove saucepan from heat. Stir in 1/2 tsp ground cinnamon and 1/2 tsp vanilla extract (if using).

Fold in 1 tablespoon chopped toasted walnuts, reserving extra for topping.

Taste and sweeten: stir in 1.5 tablespoons raw honey, then taste and adjust sweeter if desired (add up to the extra 1 tablespoon honey reserved for finishing).

Finish & Serve

If the oatmeal feels too thick, stir in up to 2 tablespoons extra milk or cream to reach desired consistency.

Ladle oatmeal into bowls. Top each serving with the remaining chopped walnuts, a few extra dried cranberries, and an extra drizzle (about 1 tablespoon) of raw honey if desired. Sprinkle a light pinch of cinnamon on top for presentation.

Serve warm. Leftovers keep covered in the refrigerator for up to 4 days; reheat with a splash of milk and a quick stir on the stove or in the microwave.
