Method
Prep Chia
Bloom chia
In a small bowl or jar, combine the 2 tsp chia seeds with 4 tablespoons (about 2 tbsp additional water) of room-temperature water. Stir to avoid clumps, then let sit 8–10 minutes until the seeds swell to a gel-like consistency. Stir once more before using.
Blend and Chill
Add 3 cups coconut water, 1 cup fresh pineapple (chopped), and 2 tbsp fresh lemon juice into a blender. If you want a slightly sweeter drink, add 1 tsp honey or agave. Blend on high for 20–30 seconds until the pineapple is fully puréed and the mixture is smooth.
Taste and adjust: sample 1–2 tbsp. If too tart, add up to 1 tsp more sweetener; if too sweet, add 2–4 tbsp more coconut water or 1 tsp lemon juice to balance.
Combine and Serve
Fill two tall glasses with about 1/2 cup ice cubes each (total 1 cup used). Divide the blended coconut-pineapple mixture evenly between the glasses.
Spoon the bloomed chia seeds evenly into the two glasses (about 1 tsp wet chia per glass). Stir gently so the chia is distributed through the drink.
Garnish each glass with a pineapple wedge and 3 fresh mint leaves. Serve immediately. If the drink sits more than 10–15 minutes, give it a quick stir to redistribute chia.
