Method
Base Mousse
Prepare fruit
Peel the avocado and remove the pit. Scoop the flesh into a blender or food processor. Peel the banana, break into chunks and add to the blender.
Add dry ingredients
Add the raw cacao powder and grass-fed whey protein to the blender. These provide chocolate flavor and protein—use chocolate-flavored whey if you want a deeper chocolate taste.
Blend to smooth
Blend on high until completely smooth and airy, about 45–90 seconds depending on your blender. Stop and scrape down the sides with a spatula once or twice to ensure even blending. The mixture should be thick, creamy, and scoopable; if too thick, add almond milk 1 tablespoon at a time until it reaches a mousse-like but stable consistency.
Taste and adjust
Taste the mousse and adjust sweetness or cacao intensity: add up to 1 more tablespoon maple syrup for sweetness or 1/2 teaspoon extra cacao for a richer chocolate note. Blend briefly to incorporate adjustments.
Chill to set
Transfer the mousse into serving dishes or ramekins (3–4 small servings). Cover and refrigerate for at least 30 minutes to firm slightly and let flavors meld. For a firmer texture, chill 1–2 hours.
Coconut Whip & Garnish
Prepare coconut whip
Open the chilled canned coconut milk and scoop out the solidified cream (leave the watery liquid). Place the cream in a small bowl and whisk vigorously by hand for about 1–2 minutes until fluffy. If desired, add 1/2 teaspoon of maple syrup and whisk to sweeten lightly.
Assemble and garnish
Top each chilled mousse portion with a dollop (about 1 tablespoon) of coconut whip. Sprinkle shredded coconut, dark chocolate shavings, and cacao nibs or toasted chopped almonds as desired for texture and presentation.
Serve
Serve immediately after garnishing, or keep chilled up to 24 hours. If storing, add coconut whip just before serving to preserve its texture.
