Oatmeal Base
Add oats and cook
Stir in 1 cup organic steel-cut oats. Reduce heat to low so the mixture is at a steady gentle simmer. Cook uncovered, stirring occasionally, for 18–25 minutes until oats are tender but still have a slight chew. If mixture thickens too much, add up to 1/2 cup additional water or milk to reach desired consistency.
Finish and rest
Once oats are cooked to your liking, remove from heat. Stir in 1 teaspoon unsalted butter or 1 teaspoon coconut oil if using, and 1 teaspoon ground cinnamon if desired. Let rest for 2–3 minutes to thicken slightly.

Prepare fruit
While oats cook, hull and slice enough strawberries to make 1 cup and rinse 1 cup blueberries. Slice 1 ripe banana into rounds.
Assemble bowls
Divide the cooked oatmeal between two bowls (about 1/2 cup dry oats yields two generous servings). Top each bowl with half the banana slices, half the sliced strawberries, and half the blueberries.
Drizzle 1 tablespoon honey over each bowl (total 2 tablespoons). Sprinkle 1 tablespoon chia seeds on each bowl (total 2 tablespoons). If you prefer, use 1 tablespoon maple syrup on a bowl instead of honey.
Serving & Variations
Serve the oatmeal immediately while warm. Stir fruit into the oatmeal if you like it combined, or leave arranged on top for texture and presentation.
Leftover oatmeal will thicken in the refrigerator. Reheat on the stove over low heat with a splash of milk or water, stirring until loosened. Add additional fresh fruit and chia seeds after reheating.
