    Prepare lobster

    If your lobster meat is cold from refrigeration, pat it very dry with paper towels. Chop the meat into roughly 1/2–3/4" pieces so you have a mix of chunks and smaller pieces for texture. Reserve in a bowl.

    Mix dressing

    In a separate bowl combine 1 tablespoon mayonnaise, 2 teaspoons melted butter, 2 tablespoons very finely diced celery, 1 tablespoon snipped chives, 1 teaspoon lemon zest and 1 teaspoon fresh lemon juice. Season with 3 teaspoons kosher salt and 1 teaspoon freshly ground black pepper. Stir until integrated. Taste and adjust — the mixture should be bright and lightly seasoned; keep it restrained so lobster flavor shines.

    Fold lobster into dressing

    Gently fold the chopped lobster meat into the dressing with a flexible spatula or spoon until evenly coated. Avoid overmixing or mashing the meat. If mixture seems dry, add an additional 1/2 teaspoon melted butter. Refrigerate, covered, for 10–15 minutes to meld flavors (you can serve immediately if needed). Right before filling the rolls, sprinkle 1/4 teaspoon celery salt over the mixture and give one gentle fold.

Rolls & Topping

    Toast rolls

    Lightly heat a large skillet or griddle over medium heat. Spread about 3/4 teaspoon butter on the cut interior of each roll (total ~3 tablespoons for 4 rolls). Place rolls cut-side down in the skillet and toast until golden brown and crisp, about 1–2 minutes. Flip and warm the outside for 30 seconds if desired. Remove and keep warm.

    Assemble the rolls

    If using lettuce, line the bottom of each toasted roll with a lettuce leaf. Using a spoon, divide the lobster mixture evenly among the 4 rolls, mounding gently. Spoon any liquid or butter remaining in the bowl over the lobster for extra richness if desired. Garnish each roll with a sprinkle of snipped chives or parsley and an optional dash of hot sauce to taste. Serve with lemon wedges.

    For a warm lobster roll variation: after folding the lobster into melted butter only (omit mayonnaise) and gently warm the lobster in a skillet over low heat for 1–2 minutes until just heated through, then fill toasted rolls. For a chilled roll (classic New England), stick to the mayo + butter method and keep chilled until assembly. Adjust salt and lemon to taste and serve immediately.
