    Prepare base and vegetables

    If brown rice is not already cooked, cook according to package directions and let cool slightly. Divide 2 cups cooked brown rice between 4 shallow bowls (about 1/2 cup cooked rice per serving). Arrange baby spinach, shredded carrots, cucumber slices, cherry tomatoes, avocado slices and chickpeas in separate small sections on top of each rice portion to create a colorful bowl that appeals to kids.

    Make dressing

    Whisk together olive oil (2 tbs), lemon juice (1 tbs), maple syrup (1/2 tsp), salt (1/2 tsp) and black pepper (1/4 tsp) in a small bowl. Taste and adjust sweetness or acidity slightly for picky kids (add another 1/2 tsp maple or a pinch of salt if needed).

    Finish and serve

    Drizzle dressing over the bowls (about 1/2 to 1 tbs each). Sprinkle shredded cheese (1/2 cup total, about 2 tbs per bowl) and sesame seeds (optional) evenly. Serve immediately so avocado stays fresh. Provide small forks or child-safe utensils and let kids mix their bowls themselves to make it fun.

    Make filling

    Heat 1 tbs olive oil or butter in a nonstick skillet over medium heat. Add finely chopped bell pepper (1/2 cup) and zucchini (1/2 cup) and sauté 3–4 minutes until just softened. Stir in black beans (1 cup) and corn (1/2 cup), sprinkle cumin (1/4 tsp), and cook 1–2 minutes until warmed through. Mash a few beans gently for a stickier filling if kids prefer.

    Assemble and cook

    Place a tortilla on a clean surface, sprinkle about 1/4 cup shredded cheese on half the tortilla, top with ~1/4 of the veggie/bean mixture, then another 1/8–1/4 cup cheese and fold the tortilla over. Repeat for remaining tortillas. Wipe skillet clean and heat over medium-low; cook each quesadilla 2–3 minutes per side until golden and cheese is melted, pressing gently with a spatula. Cut into wedges sized for little hands.

    Serve warm with mild salsa (1/2 cup total for sharing) and plain Greek yogurt or sour cream (1/4 cup) for dipping. For younger kids, remove any spicy salsa and offer extra plain yogurt.

Simple Fruit Yogurt Parfait (Kid Appeal Dessert)

    Spoon 2 cups yogurt into a medium bowl and layer into 4 small glasses or cups: start with 2 tbs yogurt, add a layer of mixed berries (about 2–3 tbs), then a sprinkle of granola (about 1–2 tbs). Repeat to make two layers. Drizzle a little honey or maple syrup (1 tsp total) over the top if desired. Serve immediately so granola stays crunchy, or keep granola separate for very young children to avoid choking hazard and let them add it themselves.
