    Toast spices

    In a dry skillet over medium heat, add the crushed cardamom pods, cloves, peppercorns and the cinnamon stick. Toast for 1–2 minutes, shaking the pan, until fragrant. Transfer immediately to a mortar or spice grinder.

    Crush spices

    Lightly crush the toasted spices (and star anise, if using) with a mortar and pestle or pulse briefly in a spice grinder to open the pods and release oils. Do not powder them — leave coarse pieces.

    Simmer tea and spices

    In a medium saucepan, bring 3 cups water to a gentle boil. Add the sliced ginger, crushed spices, and black tea leaves. Reduce heat to low and simmer uncovered for 8 minutes, stirring once or twice so tea steeps evenly.

    Add milk and sweetener

    Add 2 cups whole milk and 3 tablespoons brown sugar to the saucepan. Increase heat to medium until mixture just begins to steam and small bubbles form around the edges (do not let it reach a rolling boil to avoid scalding). Simmer on low for another 6–8 minutes, stirring occasionally to dissolve sugar and marry flavors.

    Finish concentrate

    Remove from heat and stir in 1 teaspoon vanilla extract. Let the chai rest off heat for 3–5 minutes to settle flavors.

    Strain

    Strain the chai concentrate through a fine-mesh sieve or cheesecloth into a heatproof container, pressing gently on solids to extract liquid but avoiding over-extraction of bitter tannins. Discard solids.

    Keep the concentrate refrigerated in a sealed jar for up to 4 days. Reheat gently before serving.

Twist & Finish

    Prepare serving milk

    For each cup of finished chai, warm 1/4 cup to 1/3 cup additional milk (or dairy-free alternative) and froth if desired. You can use a small saucepan, microwave, or milk frother. If you prefer a stronger drink, use 1/3 cup milk; for a milkier chai, use 1/2 cup.

    Combine concentrate and milk

    In a mug, combine 1 part chai concentrate with 1 part warmed serving milk (adjust ratio to taste). For a single standard serving (about 12 oz), use ~3/4 cup concentrate and ~1/4 cup warmed milk.

    Add the twist

    Stir in 1 teaspoon honey or maple syrup if extra sweetness is desired. Add 1 teaspoon fresh orange zest to each 2–3 servings (about 1/3 teaspoon per cup) or garnish directly on each cup for the citrus twist. The orange brightens the warm spices.

    Top with an optional dollop of whipped cream and dust lightly with 1/4 teaspoon ground cinnamon. Serve immediately while hot.
