Prepare the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced onions, zucchini, mushrooms, and yellow squash. Sauté until tender, about 5-7 minutes. Add diced tomatoes and cook for an additional 2 minutes. Season with salt and black pepper to taste. Remove from heat.

Assemble the Quesadilla
Place a tortilla in a clean skillet over medium heat. Spread a portion of the sautéed vegetable mixture on half of the tortilla, sprinkle with shredded cheese, and fold the other half over to create a half-moon shape. Cook until the tortilla is golden and the cheese is melted, about 3-4 minutes per side. Repeat with the remaining tortillas and filling.

Serve
Cut the quesadillas into wedges and serve with cooked rice, sour cream, and guacamole on the side.
