Marinated Grilled Tilapia and Crab with Cheese Dip

Preparation and Cooking

    Marinate the Tilapia

    In a bowl, mix lime juice, olive oil, minced garlic, paprika, salt, and black pepper. Add tilapia fillets and marinate for at least 30 minutes.

    Prepare the Poblano Peppers

    Roast poblano peppers over an open flame or in a broiler until charred. Place in a bowl and cover with plastic wrap for 10 minutes. Peel off the skin, slice open, and remove seeds.

    Cook the White Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of white rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.

    Grill the Tilapia

    Preheat the grill to medium-high heat. Grill marinated tilapia fillets for about 4-5 minutes on each side until cooked through.

    Prepare the Crab

    In a small saucepan, gently heat crab meat just until warmed through. Mix with a tablespoon of the cheese dip for added flavor.

    Assemble the Dish

    On a serving plate, place roasted poblano peppers as a bed. Top with grilled tilapia and warm crab mixture. Drizzle with cheese dip and serve with white rice salad and sour cream on the side.
