Prepare the Corn Husks
Soak the corn husks in warm water for about 30 minutes until they are pliable.

Cook the Filling
If using pork or chicken, cook it in a pot with water until tender. Shred the meat and mix with your choice of spices or sauce. If using vegetables, sauté them until cooked and mix with any desired seasoning.

Make the Dough
In a large bowl, combine masa harina, baking powder, and salt. Gradually mix in the vegetable oil and chicken broth until you have a smooth dough.

Assemble the Tamales
Spread about 2 tablespoons of masa dough onto a soaked corn husk, leaving space at the edges. Place a spoonful of filling in the center and optionally add cheese. Fold the sides of the husk over the filling and then fold the bottom up to enclose it.

Steam the Tamales
Place the tamales upright in a steamer basket. Cover with a wet cloth and steam for about 1 to 1.5 hours, or until the masa easily pulls away from the husk.

Serve
Once cooked, remove the tamales from the steamer. Serve warm with additional cheese on top if desired.
