Tamale Preparation Steps

Soak Corn Husks
Place the corn husks in a bowl of warm water and soak for about 30 minutes until they are pliable.

Prepare the Masa Dough
In a large bowl, combine masa harina, baking powder, salt, and vegetable shortening. Mix well. Gradually add water until the dough is soft and pliable.

Assemble Tamales
Take a soaked corn husk and spread about ¼ cup of masa dough onto the husk, leaving the top and bottom edges clear. Add 2 tablespoons of your chosen filling (chicken, pork, or cheese) in the center. Fold the sides of the husk over the filling, then fold the bottom up to secure it.

Steam Tamales
Place the tamales upright in a steamer pot. Cover and steam for about 1 hour, or until the masa is firm and fully cooked.

Serve
Remove tamales from the steamer, place on a plate, and serve topped with red sauce.
