Directions for Taco De Birria

    Prepare the Birria

    In a dry skillet, toast the guajillo and ancho chiles for about 2 minutes until fragrant. Remove stems and seeds. In a blender, combine toasted chiles, cumin seeds, black peppercorns, cinnamon stick, garlic cloves, and beef broth. Blend until smooth.

    Cook the Beef

    In a large pot, add the beef chuck roast and pour the blended sauce over it. Add the bay leaf and salt to taste. Cover and simmer on low heat for about 2 to 3 hours until the meat is tender and shreddable.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and shred it with two forks. Return the shredded beef to the pot and let it simmer in the sauce for an additional 30 minutes.

    Assemble the Tacos

    In a skillet, warm the corn tortillas. Fill each tortilla with the shredded birria, top with diced onions and chopped cilantro. Fold the tortilla in half.

    Serve

    Serve the tacos with lime wedges, cooked rice, beans, and a side of consome de birria for dipping.
