Prepare the Corn
Preheat your grill to medium-high heat. Peel back the husks of the corn without removing them completely, and remove the silk. Rinse the corn under cold water and then pull the husks back over the corn.

Grill the Corn
Place the corn on the grill. Cook for about 10-15 minutes, turning occasionally until the corn is tender and slightly charred.

Make the Topping
In a bowl, mix together the sour cream, mayonnaise, lime juice (from one lime), salt, and pepper until well combined.

Assemble the Street Corn
Once the corn is grilled, remove from the grill and carefully peel back the husks. Brush the sour cream and mayo mixture over the corn, then sprinkle generously with Cotija cheese, chili powder, and chopped cilantro. Squeeze additional lime juice over the top if desired.

Serve warm as a delicious snack or side dish, garnished with extra lime wedges and cilantro.
