Prepare the Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper. Remove from heat.

Assemble the Quesadilla
Place a tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese on one half of the tortilla. Add a portion of the sautéed spinach on top of the cheese, then sprinkle remaining cheese over the spinach. Fold the tortilla in half.

Cook the Quesadilla
Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

Serve
Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
