Preparation Steps
- 1
Prepare the Tamale
In a mixing bowl, combine the corn masa with vegetable broth and a pinch of salt to create a dough. Spread a spoonful of the dough onto a corn husk, add a spoonful of your chosen filling, and fold the husk around the filling. Steam the tamales for about 45 minutes.
- 2
Cook the Rice
In a medium saucepan, combine rice with 2 cups of water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and let simmer for about 20 minutes until rice is tender.
- 3
Prepare the Burrito Filling
In a skillet, heat olive oil over medium heat. Add black beans, chili powder, cumin, and salt. Cook for 5-7 minutes, stirring occasionally until heated through.
- 4
Assemble the Burrito
Lay a large flour tortilla flat. Place a scoop of rice and a scoop of the black bean mixture in the center. Fold the sides of the tortilla over the filling and then roll it up tightly.
- 5
Serve
Once the tamales are cooked and the burrito is assembled, serve them together on a plate. Enjoy your Special #6!
