Directions for Making Sopes

Prepare the Dough
In a large bowl, mix masa harina and salt. Gradually add water and knead until a smooth dough forms. Let it rest for 15 minutes.

Shape the Sopes
Divide the dough into 6 equal pieces. Roll each piece into a ball and flatten it into a disc about 1/2 inch thick. Use your fingers to create a raised edge around the perimeter.

Cook the Sopes
Heat a non-stick skillet over medium heat. Cook each disc for about 2-3 minutes on each side until lightly browned. Set aside to cool slightly.

Fry the Sopes
In a deep skillet, heat oil over medium-high heat. Fry each sope for about 1 minute on each side until crispy. Drain on paper towels.

Assemble the Sopes
Spread a layer of refried beans on each sope. Top with shredded chicken or steak, lettuce, diced tomatoes, and crumbled cheese. Drizzle ranchero sauce on top.

Serve
Serve immediately while warm, garnished with additional ranchero sauce if desired.
