    Prepare the Dough

    In a mixing bowl, combine flour, baking powder, and salt. Cut in the shortening until the mixture resembles coarse crumbs. Stir in warm water and honey until the dough forms.

    Knead the Dough

    Turn the dough onto a lightly floured surface and knead for about 2-3 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll and Cut

    After resting, roll the dough out to about 1/8 inch thickness. Cut into 3-inch squares or triangles.

    Fry the Sopapillas

    In a deep skillet or fryer, heat oil to 375°F (190°C). Fry the dough pieces in batches until they puff up and turn golden brown, about 1-2 minutes per side. Drain on paper towels.

    Prepare Cinnamon Sugar

    In a small bowl, combine sugar and cinnamon.

    Dust the fried sopapillas with cinnamon sugar and drizzle with honey. Serve warm with a scoop of vanilla ice cream on top.
