Cooking Instructions
- 1
Prepare the Chicken
In a large pot, bring water to a boil. Add the chicken breasts and cook for about 15-20 minutes or until fully cooked. Remove chicken from the pot and let cool before shredding.
- 2
Make the Mole Sauce
While the chicken is cooking, heat the mole sauce in a saucepan over medium heat until warmed through.
- 3
Shred the Chicken
Once the chicken has cooled, use two forks to shred it into bite-sized pieces.
- 4
Combine Chicken and Mole
Add the shredded chicken to the warmed mole sauce. Stir to coat the chicken evenly. Season with salt and pepper to taste.
- 5
Prepare the Rice and Beans
Cook the rice according to package instructions. Heat the black beans in a small saucepan until warmed through.
- 6
Toast the Tortillas
In a dry skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable.
- 7
Serve
On each plate, serve a portion of the shredded chicken covered in mole sauce, alongside rice, black beans, and warm tortillas. Sprinkle sesame seeds on top of the chicken for garnish.
